During the recent hanami (cherry blossom viewing) party at Yoyogi park I managed to stand still long enough, and form sentences well enough to interview a gentleman by the name of George Juniper. George is from England, and was formerly a brewer at Dark Star Brewing Co. in Brighton, before shipping over to Japan to work at Kiuchi Brewery in Ibaraki, Japan. Kiuchi is the brewery behind the Hitachino Nest brand, perhaps the most recognized Japanese craft beer outside of Japan. George gave me a little critique on my smoked brown ale, and gave me the low-down on how he got into the biz. Watch and learn.

The only source for CO2 I have located in my area doesn’t offer anything
smaller than 20 lbs and they don’t fill them, it’s an exchange.
